Dit klassieke Nam Prik Pow-recept werd van generatie op generatie doorgegeven aan Dominique Woolf via haar oma. Dominique, zelf half Thais, geeft haar eigen draai aan deze heerlijke condiment, marinade en kookpasta ineen.

Deze kruiderij, ook wel bekend als Nam Prik Pao, wordt vaak omschreven als een 'jam' vanwege de intens kleverige aard. Een voorraadkast nietje in Thaise keukens, de "pao" in nam prik pao betekent branden of grillen, wat verwijst naar de intense kookmethode die wordt gebruikt om deze smaak te bereiden.
